And now for another Taco Tuesday. Still struggling to keep myself fed here. Doctor pointed out yesterday that just because I have high "good" cholesterol, it does not negate my high "bad" cholesterol. Jerk.
So it's time for me to think Mediterranean. Enjoy these kebabs, like I used to before I found out there are no outdoor grills allowed by my HOA.
Mediterranean Chicken Kebabs
Mix in a marinating dish:
1/4 cup olive oil
1/4 cup fresh lemon juice
1/4 cup white vinegar
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon ground black pepper
2 pounds chicken cut into 1 1/2-inch pieces
Marinate a few hours, like 4 or 5. Then thread chicken onto 6 pre-soaked wooden skewers with:
1 large green pepper, cut into 1-inch pieces
1 large red pepper, cut into 1-inch pieces
1 red onion, quartered and separated
12 cherry tomatoes
12 fresh mushrooms
Grill on medium for about 10 minutes. Serve with some lemon rice if you have good cholesterol, because who knew lemon rice had so much butter in it?Do YOU enjoy cooking? Have you always? Do you keep track of your cholesterol?
